In the life of a farmer for today> in my crockpot to be canned later is my Elderberry plus syrup. Just a little water, 2 pints of picked cleaned elderberries, pint of amazing blueberries and equivalent to a sandwich bag full of cleaned black caps. At the end of cooking down, I will add in some ginger and a little lemon juice for the acid content for canning. Most folks do elderberry syrup with just elderberries and add in a ton of sugar which is no good for you. I add in other berries for more nutrition, flavor and to stretch it further and no sugar. Once I open up a jar, I add in raw local honey. In background of this picture, are jars of stewed zucchini and under towel are jars of canned chili sauce. I am 60 and been waterbath canning since I was a kid and taught by great grandmother, grandmother (she owned a restaurant) and my mother. Coming soon, I will do a post on all about elderberries.
